This tofu scramble is one of my go-to’s for a Sunday brunch- it’s tasty, so customizable, and is a complete source of protein (meaning it contains all of the amino acids your body needs!)💪🏻

Something that I hear a lot of people say is that tofu isn’t good for you since it contains soy🙅🏼♀️. The reasoning behind this claim is that soy contains a chemical called phytoestrogens, which can bind to the estrogen receptors in our body and mimic the effect of estrogen. However, what these phytoestrogens REALLY do is MODULATE estrogen levels. This means that if estrogen is too low, the phytoestrogens will help raise it, and if estrogen is too high, the phytoestrogens will help to lower it. It’s all about balance⚖️
.
So, in many cases phytoestrogens (and soy!) can be good for you. Some instances when you would want to up your intake would be:
•Menstrual issues 🩸
•Menopausal hot flashes 🔥
•Breast cancer prevention 💞
•Osteoporosis 🦴
•Benign prostatic hyperplasia 🩺
Where can I get phytoestrogens?
•Soy products, like tofu, tempeh, & edamame💚
•Flax seed (adding ground flax to smoothies, oats, or chia pudding is such an easy way to get them in!)💛
If you want to up your phytoestrogen levels, try this recipe! Happy brunching☀️ .
RECIPE:
Ingredients:
•Tofu (I use soft or medium-firm for this!)
•Veggies (red pepper, jalapeno, mushrooms, kale, spinach, onion, whatever you’ve got) .
•Turmeric .
•Chilli powder
•Cumin .
•Paprika
•Garlic .
•Kala namak salt (or regular salt, but this black salt makes it taste more egg-y).
•Salsa .
•Hot sauce (to top, if you’re feeling it!) .
•Add the tofu to a pan on medium heat, break it apart with a spoon and cook off some of the liquid.
•After about 3-5 minutes, throw in the spices (about 1tsp of each), garlic, veggies, and a bit of salsa
•Cook for about 5 more minutes, then throw it on toast!
